You know it’s almost Lent, right? Oh, you didn’t?? Haven’t flipped the page on the calendar to see that February 18th is Ash Wednesday? Well, do it now. Mark it. Be sure to start your meal planning for fast and abstinence days! Ok, I know it sounds silly and backwards to plan for a fasting day (because fasting= not eating), but maybe some of you are pregnant or nursing, and/or have young children who don’t fast. In any of those cases or other medical situations in which fasting would be really bad for you, you need to have a plan. A planned meal is better than an unplanned one, every time, especially when you can’t eat meat. No running to the fast food joint down the street when you forgot to buy eggs or fish at the store.
Don’t worry. Planning isn’t so bad, especially when I’m going to give you 5 of my faves right off the bat! Every week from now until Easter I’ll be sharing meatless ideas for not just Fridays, but any day of the week. During Lent, I try to prepare more than one meatless meal each week, to increase our simple eating. Want to join in the fun? The Pioneer Woman’s Best Tomato Soup Ever: You really should try this. It’s the only tomato soup I’ve made in 6 years, ever since I first tried this one. For Fridays in Lent, substitute vegetable broth for the chicken broth. Serve with grilled cheese, tuna melts, rice, or just by itself. It’s so, so good.
Avocado Omelettes by Amanda: So tasty. Good for breakfast, lunch, or dinner. I want one right now, in fact.
Butternut Squash and Beans (two ways!) This is yummy. And looking up this post reminded me of it, and now I want to eat it, too. Time to find some butternut squash and get ready for Lent!
